One Pot Chicken and Orzo

I found a recipe online and decided to give it a try. There were some issues with it.  For one, it said to use chicken thighs.  The thighs put so much fat into the pot that it was not very appealing.  Also, it had spinach and we like green beans better. 

Ingredients
  • 1/2 teaspoon salt
  • 1/2 teaspoon fresh ground black pepper
  • 1/4 teaspoon garlic powder
  • 1/4 teaspoon onion powder
  • 1 teaspoon italian seasoning mix
  • 1 teaspoon paprika
  • 2 tablespoons olive oil
  • 6 boneless skinless chicken breasts (approximately 1.5 lbs)
  • 1 large shallot chopped
  • 2 carrots chopped
  • 2 cups raw green beans, cut into bite sized pieces
  • 2 cloves garlic chopped
  • 2 cups low sodium chicken broth
  • 1 cup uncooked orzo
Instructions
  1. Mix salt, black pepper, garlic powder, onion powder, oregano and paprika. Sprinkle over both sides of chicken breasts.
  2. Heat 1 tablespoon olive oil in skillet over medium heat. Cook chicken 4 minutes each side. Remove chicken to plate. Add 1 tablespoon olive oil to pan and reduce to medium low. Add carrots, shallots, and green beans then cook for 5 minutes stirring and scraping the pan frequently. Add garlic and cook additional 1 minute. Add chicken broth and orzo. Bring to low boil. Cover and turn to simmer for ten minutes. Remove lid and add cooked chicken. Cover and simmer for additional 10 minutes.
