Ingredients
- 1/2 teaspoon salt
- 1/2 teaspoon fresh ground black pepper
- 1/4 teaspoon garlic powder
- 1/4 teaspoon onion powder
- 1 teaspoon italian seasoning mix
- 1 teaspoon paprika
- 2 tablespoons olive oil
- 6 boneless skinless chicken breasts (approximately 1.5 lbs)
- 1 large shallot chopped
- 2 carrots chopped
- 2 cups raw green beans, cut into bite sized pieces
- 2 cloves garlic chopped
- 2 cups low sodium chicken broth
- 1 cup uncooked orzo
Instructions
- Mix salt, black pepper, garlic powder, onion powder, oregano and paprika. Sprinkle over both sides of chicken breasts.
- Heat 1 tablespoon olive oil in skillet over medium heat. Cook chicken 4 minutes each side. Remove chicken to plate. Add 1 tablespoon olive oil to pan and reduce to medium low. Add carrots, shallots, and green beans then cook for 5 minutes stirring and scraping the pan frequently. Add garlic and cook additional 1 minute. Add chicken broth and orzo. Bring to low boil. Cover and turn to simmer for ten minutes. Remove lid and add cooked chicken. Cover and simmer for additional 10 minutes.
